Maple and Basil Infused Carrot Soup

  • 6 medium carrots
  • 1/4 cup sweet basil, chopped
  • 1/4 cup maple syrup
  • 2 1/4 cups vegetable stock
  • salt & pepper to taste

Directions

Peel and roughly chop carrots.  Add to boiling vegetable stock with basil and maple syrup.  Boil until carrots are soft enough to be pureed.  Puree adding salt and pepper to taste.
